This majestic bean has roots in Southern Mexico, and is traditionally enjoyed with roasted poblanos and chile-laden moles. Raised among vegetables and fruit trees, Ayocote Morado is born from a red flower that’s also used ornamentally.

Farm: Grupo Agrícola San Juan
Farmer: César Díaz 

San Rafael Tlanalapan, in the northern part of Puebla, is famous for its ancient history of producing corn and large purple runner beans (Ayocote Morado). Farms benefit from fertile soil due to their proximity to the active volcano Popocatepetl. The area is also known for its vibrant Festival of Chiles each August, where surrounding villages feast on the poblano chile harvest in various forms.

César Díaz's family farm is known for its notably large, deep purple Ayocote Morado, owing to practices that care for the soil: traditional horse plowing, manual weeding and grasshopper capture, and healthy crop rotations with vegetables like poblano chiles, corn, and onions.

My current favorite beans!

This is my second purchase of the Ayacote Morado. I cook them as suggested in the Instapot with garlic, a dash of oil and a romano cheese rind. Mixed with sauteed Chard, with some aleppo pepper & romano sprinkled on top. Simple, delicious and satisfying.

So much flavor!!!

I cooked these and mixed them with its blanco counterpart in a broth recipe and it was incredible. Natural flavors were so unique and hardly needed any salt. So tasty!!!!’

My new favorite beans

If you are looking for a hearty, flavorful bean, look no further. I started cooking beans in the last year or so with mixed success on doneness and hands down these beans have been the best I've tried. They cooked perfectly when I followed the provided pressure cooker instructions and the beans could still hold up to a lively simmer when I went to cook down the broth a bit. Perfect!

These beans were SOMETHING ELSE. Super savory and filling. My partner and I just ate them as is, but I imagine they'd be good in just about anything.

Incredible flavor !

Alll of the beans I have tried have been so flavorful ! and the descriptions you have given hold true. There is a great variety from the white beans to the Ayocote Morado beans are rich and bold and complex just as you describe them. Even after all the cooking, slow style of several hours.
