Delicious Baked Beans

Made the Baked Cannellini with Lemon and Dill recipe with these beans and it was absolutely delicious! Ate it as a side dish then as beans on toast for breakfast as well. Definitely recommend trying them with that recipe. Also just making them in a pressure cooker, they were more savory and had a wonderful texture compared to regular dried cannellini beans I have bought at my local grocery store.

So happy to have found these beans as dried beans. I hate to have to use canned and now we don't have to eat those old canned beans anymore!

Cooked up whole bag with mirepoix of onion, carrot, celery and bay leaf. No pre soak and they turned out perfecly tender in a very flavorful bean broth.

I have a terrible history of dried beans taking an extraordinary amount of time to cook, even thoughI tried different places I thought had turnover. Thus, I ordered the 2021 crop with some trepidation. They cooked in a reasonable time and were tasty and wonderful. I'm ordering more!

The hummus I made with these beans was spot on - great texture, mixed with tahini, roasted garlic, white miso, lemon, salt + pepper and olive oil. A food processor makes it super easy and it keeps safely in the fridge, melding flavors. Looking forward to trying more ways to use this favorite variety!
