Idaho’s Magic Valley in South Central Idaho is dotted with crops like beans, barley, wheat, potatoes, and corn that thrive in its arid climate, sandy soil, and moderate temperatures. Mike Heath is considered an organic pioneer by his peers (and even featured in Michael Pollan’s Botany of Desire!), relying on complex crop rotations to cultivate healthy and alive soil, beneficial insects for pest control, and compost as natural fertilizer. Today, bean production is largely stewarded by Alvaro, who has been Mike’s right hand for 20+ years.

Absolutely wonderful

You really must try these beans, any of them. They is just no comparison! You will be amazed at how much easier to cook and yummier to eat,

Cannellini beans

Very good, as with past experiences. Smooth & creamy. Still can't believe I don't have to pre-soak & can add salt at beginning of cook time! Yay!

Beans of a different standard

You never think something like this can possibly live up to the hype, but you will be surprised and pleased to find out that all of our choices have been exceptional and more than we could have hoped for in taste, cooking quality and versatility! Definitely converts. I do think I am annoying my kids though by running around after them and telling them all about the guy who grew our sustainably grown small batch, regenerative agro sourced beans! They are over hearing about Andy in Idaho but personally, I'd love to give him my compliments and a shout out for job well done!

Delicious Baked Beans

Made the Baked Cannellini with Lemon and Dill recipe with these beans and it was absolutely delicious! Ate it as a side dish then as beans on toast for breakfast as well. Definitely recommend trying them with that recipe. Also just making them in a pressure cooker, they were more savory and had a wonderful texture compared to regular dried cannellini beans I have bought at my local grocery store.

Best selection I've seen

So happy to have found these beans as dried beans. I hate to have to use canned and now we don't have to eat those old canned beans anymore!
