Mike Heath is considered an organic pioneer by his peers (and even featured in Michael Pollan’s Botany of Desire!), relying on complex crop rotations to cultivate healthy and alive soil, beneficial insects for pest control, and compost as natural fertilizer. Today, bean production is largely stewarded by Alvaro, who has been Mike’s right hand for 20+ years.

Cooked up whole bag with mirepoix of onion, carrot, celery and bay leaf. No pre soak and they turned out perfecly tender in a very flavorful bean broth.

I have a terrible history of dried beans taking an extraordinary amount of time to cook, even thoughI tried different places I thought had turnover. Thus, I ordered the 2021 crop with some trepidation. They cooked in a reasonable time and were tasty and wonderful. I'm ordering more!

The hummus I made with these beans was spot on - great texture, mixed with tahini, roasted garlic, white miso, lemon, salt + pepper and olive oil. A food processor makes it super easy and it keeps safely in the fridge, melding flavors. Looking forward to trying more ways to use this favorite variety!
