Why we chose it
Southwest Gold delivers earthy flavor and an irresistibly creamy texture that has made it a beloved staple among the PB community since its debut. Its beautiful, speckled coat adds visual appeal to warm salads, while the rich, golden broth make it a perfect comfort food as the weather cools. We love embracing its Southwest roots by incorporating these beans into dishes with a spicy kick.
The sourcing backstory
These gorgeous beans are the perfect representation of what’s possible when farmers, breeders, distributors, and home cooks come together with a common goal. It was adapted from the heirloom “Zuni Gold” using traditional breeding methods by breeder Travis Parker of UC Davis. The PB community first met these beans as part of our 2022 Pilot Program – where 40 home cooks taste-tested 8 varieties being trialed by farms and university researchers. The consensus was clear: our Southwest Gold beans were the tastiest.
