Sadly, my beans received 1 week ago were from October 2023. The website states "fall 2023-2024 harvest" - which is a wide range, and my beans are already almost 2 years old at the time of arrival, and as I ordered several boxes. This seems misleading to state that the beans are fresh, when the website seems to promote freshness as a key feature that justifies spending more. The customer service was very friendly, however. The beans taste good, but I can get fresher and equally nice tasting beans from my local Mexican store at a fraction of the cost .
Your beans are a daily diet routine for me. I always soak them overnight in salted water, transfer them to a cast iron Dutch oven, cover the with broth - vegetable, chicken, or beef - and season liberally. I love spicy foods, and I always season freestyle, using dehydrated onions, garlic, and chilies with varying spoonfuls of Garam Masala, cumin, coriander, paprika, curry, and assorted other Indian spices, then bake in a 225F oven for four or five hours. Each batch is different and delicious.

The beans are well packed and are whole—while they don’t generally need soaking—I do to speed up the cooking process. They are flavorful and creamy—and come in many different varieties.
