After finally slow-cooking last year’s chickpeas, I found myself craving more. I ordered multiple packages. They are sweet, versatile and scrumptious. I add them to soups, pestos, polentas, and like them on their own with a bit of salt, oil and parsley. I am so glad you offer them.
On a lark I ordered a variety of beans thinking, “How could they be that different from bagged in the store”. I am here to say - I am here to say, “All the difference in the world”!! Never going back! They truly are wonderful!!

I finally got around to cooking up a pound of the canalini beans in my instant pot. When I opened the pot, there was a piece of white plastic on top of the beans.

I'm finding that my (aging) body really prefers organic foods (and dislikes whatever residues of fertilizer or pesticides remains on the non-organic). As a result, your variety of organic beans are perfect for me. I wasn't raised in a bean-eating home, but I'm quickly learning how to do it with your beans. Not having to soak them is a great benefit because I can create a big Dutch oven full of beans and broths and let them simmer while I do other things. Then I portion them into small-ish glass containers for the freezer and top off with the bean juices. (I also save any leftover juice in a separate freezer container as if it was a sourdough starter for a future pot. Thanks for your beans and all your tips about how to make and use them!
