With its rich history of thriving nomadic tribes as old as the Aztecs, Zacatecas’s sunny, semi-arid climate and rich red soil is home to thousands of small-scale farms that are leading producers of guavas, chiles, nopales, and, of course, beans. Our farm partner, Armando, is dedicated to growing and promoting organic agriculture and crops that are important symbols of regional identity and cultural tradition.

Only one "Blue Bayo" note...

We love love love these beans! Our only issue is that they we use them up so fast. Using this forum to request that our esteemed bean merchants at PB begin offering larger quantities. It's a great way to cut down on packaging (by unit weight) and keep your loyal customers tethered (so that we don't go looking for bulk elsewhere) ;)

Surprised!

These were so good in a brothy soup! I know that is how the beans are marketed and I’m pleasantly surprised that was true! Best pot of beans ever.

Delicous Bayo

Tried Bayo for the first time. Made in instapot, tasted fantastic. Added to a soup and were phenomenal, stayed firm cooked in the soup, added bean broth to soup as well. Similar enough to the pinto to switch in recipes but distinct and flavorful enough to add its own spin. Love them!

Light and buttery smooth - Just like my Abuelas

Both of my grandmothers only cooked Bayo beans as it was the most common in Colima, it’s very hard to find them in the US market. Now I get to enjoy the same favor and texture. These beans taste amazing! I’ll be ordering a few boxes for my parents, they’ll be delighted to return to their native bean,

I ordered speckled Bayo beans, but received a plain tan colored bean. I don't know what bean I received. Whatever, they were okay..
