I love these Sangre de Toro beans. They may be small but packed with a powerhouse of flavor. Goodbye to the regular (organic) red kidney beans I use to get from the local natural food store, which are fine but somewhat lacking in comparison. These gems are fresher, tastier, cook quickly on the stovetop in my well used flameware clay pot while keeping their shape, and now my very favorite red bean.
This is my second purchase of the Ayacote Morado. I cook them as suggested in the Instapot with garlic, a dash of oil and a romano cheese rind. Mixed with sauteed Chard, with some aleppo pepper & romano sprinkled on top. Simple, delicious and satisfying.

The name is so alluring! The color of the dry bean is like a cat's eye marble or marbled paper! The bean cooks up big and goes with everything I add it to! Just love Eye of the Goat beans!
I ordered speckled Bayo beans, but received a plain tan colored bean. I don't know what bean I received. Whatever, they were okay..
Beans are all excellent. I make a soup with them every week. You will never open another can of beans again after using these. Excellent flavor.
